Anyone who has tasted the Iranian ‘tah dig’ will relish the memory of its taste. It is the toasted bottom crust of cooked rice and is absolutely delicious. I first had it at an Iranian friend’s house and ever since then I have been hooked to it. I used to think that the process of this toasted crust was pretty straight-forward and could be done in any cooker. But, it seems that a specific type of cooker like the Pars Rice Cooker is advisable because it has a manual switch-off which is apparently necessary for this crust. The automatic switch does not work in this food.
